Recipe: Turkey Curry
Okay the recipe is rather similar to the last recipe we last
published way back in 2010. However due to the time of year I imagine that
there will be many of you who will have plenty of leftover Turkey this
Christmas.
Ingredients:
Cooked Turkey
1 Medium Onion
1 Clove Garlic
2 Tablespoons Peanut Oil
2 Tablespoons Curry Powder
1 Tablespoon Light Soy
1 Tablespoon Cornflour
2 Tablespoon Coconut Cream or Coconut Milk
4oz Pineapple
1 Red Pepper
1 Pinch of Sugar
Add Salt to taste
Preparation:
Cut turkey into square cubes. Cut onion and red pepper into slices. Drain pineapple. Blend cornflour with soy sauce.
Cooking:
Heat oil in wok. When heated add onion and garlic and stir fry for a few seconds.
Add curry powder and continue to stir fry for a further minute.
Turn cooker down to a medium heat, pour in stock and bring to boil. Then simmer gently for 5 - 8 minutes.

Add coconut cream, pepper, sugar, and pineapple then continue to stir. Finally add the cornflour mixture and let it simmer for another minute.
Dish is now ready to be served. Serve with boiled rice.
